Quinoa Veggie Cheesy Balls

Ingredients :

1-2 Cups of cooked Quinoa

Finely Chopped:

  • Chopped broccoli
  • 1/2 Red Pepper
  • 1/2 Cup Baby Spinach
  • Green Spring onions as per taste
  • 1 Leek (white portion) or 1 small onion (I used Leek)
  • Coriander leaves

Shredded Cheddar Cheese (I didn't put a lot!)

2 tsp Chia seeds

Lemon Pepper Seasoning

Himalayan or any salt

Freshly ground black pepper

1 tsp cumin powder

Lime Juice

 

DRESSING:

Finely chopped dill leaves

yogurt

Finely chopped 1 clove of garlic

salt

pepper

lime juice

 

 

Directions :
  1.  Soak chia seeds in water before starting with anything for approximately 10-15 minutes until it forms a gel consistency. 
  2.  Mix cooked quinoa with all the chopped vegetables and finely chopped vegetables and the shredded cheese.
  3.  Add the chia gel, all seasonings, spices and lime juice and mix well.
  4.  Wet your hands and form balls of this damp and sticky mixture.
  5.  Apply oil to the wells on this pan (looks like Abelskiver pan).
  6.  Now cover this empty pan, and heat it for a few seconds before you put the mixture in each of these wells.
  7.  After putting this mixture in each of them, cover and cook for few minutes until cheese starts melting and the bottom becomes golden brown in color.
  8.  Gently flip these balls with the stick that you get with this pan and cook them on the other side.
  9.  Serve them hot with the dill dressing or ketchup.
Notes :

This is the one I have from Amazon, but I would suggest buying an Cast Iron one instead of non-stick!
