Lasan Fry (Garlic Fry)

Ingredients :
  • Eggs
  • Sandwich whole grain buns/any bread
  • 2 bunches Scallions
  • 2 bunches Cliantro
  • 5-6 green chillies
  • 7-8 min. Garlic cloves (more the better)
  • 1/2 tsp. Red Chilli powder
  • 1 tsp. Cumin powder
  • Organic Salted Butter
  • Olive Oil
  • Salt to taste
Directions :
  1. Finely chop the bunches of scallions and cilantr0, garlic cloves and green chillies.
  2. Heat olive oil or any oil of your choice in a pan, add green chillies and garlic to it. Stir fry for a few seconds, taking care of not burning or browning the garlic.
  3. Add the remaining chopped ingredients.
  4. Add, red chilli powder, cumin powder and salt. Stir fry till cooked.
  5. In a separate pan, heat oil and make a sunny side of one or two eggs at a time.
  6. Apply butter to the buns/bread and toast them in a heated pan.
  7. While serving, put the sunny side up fried egg in a plate, put the green scallion mixture on top of the yellow egg yolk part with the buns on the side.
  8. To eat this, take a bite of the bun, green mixture and the fried egg together. Tastes super yummy and you can make it as spicy as you want by varying the number of green chillies.
Notes :

Lasan Fry- Garlic is called "Lasan" in Hindi language. Being of an Indian origin, garlic is an regular and most loved ingredient of our diet. However, there are many communities in India unlike mine who dont use ginger or garlic at all in any of their meals. This recipe is especially for garlic and egg lovers. This was introduced to me by my cousin while I visited her in California last year and fell in love with this dish. I guess I make this more dish more often than her ;)
